Abstract
The adaptation, cultivation and consumption of cocoa were carried out by the Toltecs, Aztecs and Mayans about 4000 years ago, however, it is stated that at least one variety of fine cocoa has its origin in the Amazon. Cocoa has had a significant weight in the republican and contemporary colonial era of the country, not only because of its economic representativeness, but also culturally; Little by little and with the concentration of capital for its exploitation, Guayaquil becomes an exchange center for cocoa in the region, due to the benefit offered by its position as a port as a connection center with markets interested in the consumption of the product. , The first cocoa boom occurred between 1770 and 1842. Since then, Ecuadorian cocoa production was characterized by primary export (Abad et al., 2020).
