Determinación de Residuos de Antibióticos en Carne y Vísceras de Origen Bovino que se Expenden en la Ciudad de Quito

General objective To determine antibiotic residues in meat and offal of bovine origin commercialized in the city of Quito by means of the ELISA method. Justification In the 35th session of the Codex Alimentarius held in July 2015, maximum residue limits were established for a number of antibiotics in milk and edible tissues (muscle, liver, kidneys), including streptomycin, β-lactams, oxytetracycline, gentamicin, tylosin with the purpose of minimizing the risk to human health associated with consumption (Codex Alimentarius, 2015; Sumano & Ocampo, 2006). And Regulation (EU) No. 37/2010 establishes the MRLs for sulfonamide enrofloxacin, (European Commission, 2010). The Spanish Society of Biotechnology (SEBIOT, 2016), mentions that food biotechnology is "the set of techniques or processes that use living organisms or substances that come from them to produce or modify a food”, but this not only includes fermented, transgenic or genetically modified organisms but also refers to the preservation of food safety, since through of its techniques allows the detection of harmful agents present in these, which are consumed daily by the human being (Romero, 2008). In addition to the aforementioned, the Enzyme-Linked Immunosorbent Assay (ELISA) is a fundamental tool in the determination residues of veterinary drugs in animals for regular human consumption, whose intake would cause disease; this technology is simple, less expensive than other techniques that have the same purpose as HPLC and also has a high sensitivity (Pastor & others, 2007). In our country there are studies on antibiotics in milk (Cholca, 2011), but not on residues of medicines in muscle and visors of bovine origin, this project aims to make known, both to consumers and to the regulatory institutions of the quality of products for human consumption, the presence of residues of medicines for veterinary use in food products of animal, since they affect the quality of these becoming a public health problem.
