Abstract

Chen one climbs from the Zumbahua parish to the foothills of the volcanoQuilotoa, in the province of Cotopaxi, Ecuador, it is possible to observe thatpotato (Solanum tuberosum), broad bean (Vicia faba), oca (Oxalistuberosa), melloco (Ullucus tuberosus) and barley are located on good land thatThey are between 2500 and 2800 meters above sea level. Between 2,800 and 3,800 meters, the lupine (Lupinousmutabilis Sweet), an edible legume, is generally planted in thehigher ground of indigenous farmers and often interspersed withthe grasslands. Until the late 1980s, lupine was the subject of prejudiceracial and social. It had been domesticated sometime before the arrival ofthe Incas and there is certainly evidence of their use in Ecuador during the periodearly colonial period and throughout the three centuries of Spanish domination inthe Andean region (Martínez-Flores, 2015). Due to its Andean indigenous origin andits rare use in urban areas, was seen by consumers of the classurban media as a meal that was only appropriate for indigenous and poor people. Somehow, this perception has changed today, because it has beencommercially produced, promoted and culturally adapted by consumersinterested in health and ecology. In such a way that the lupine became agastronomic specialty and a healthy meal.
