Abstract
Numerous studies show that an appropriate diet rich in bioactive compounds such as carotenoids and phenolic compounds, among others, can reduce the risk of developing diseases. In this context, the consumption of functional foods continues to gain importance. Functional foods, in addition to providing nutrients, provide other compounds that have a beneficial effect on certain functions, reducing the risk of disease or improving health. On the other hand, water is a scarce commodity and the volume available for agricultural use is very limited in some regions. Therefore, the efficient use of this resource should be a criterion to be considered in the implementation of new crops and the use of those already planted. At present, products grown under water-saving conditions are called hydrosustainable products. Some studies indicate that the use of controlled deficit irrigation techniques can contribute to increase certain bioactive compounds, improve some sensory attributes, do not affect crop productivity and, finally, are environmentally friendly due to the optimization of water use. In this doctoral thesis, the commercial and functional quality based on the content of carotenoids and phenolic compounds of tomato (Solanum licopersicum L.) was evaluated as a function of different agronomic factors, and the content of functional compounds (carotenoids and phenolic compounds) in flowers with a view to enhancing their interest in food.
