Abstract

In order to promote research within and outside the Salesian Polytechnic University, the Industrial Engineering career and the Industrial Processes Research Group, GIPI, periodically develop research conferences. Professors and students present the results of the work carried out during their academic activity. Answering questions about the level of quality and service in supermarkets in Guayaquil was the starting point for this work, the results of which were presented at the VI Research Conference of the Industrial Engineering Career. The measurement of the perception of the quality of the services provided during the purchase process has motivated the authors to establish a statistical analysis that allows determining levels of reliability, personal interaction, quality policies in the purchase and consumption process in the different supermarket chains. A contribution to the commercial knowledge of sellers, customers and consumers.
