Description
This project addresses the historical gap between university knowledge generation and the productive sector, focusing on improving the efficiency and sustainability of the dairy plant "El Tambo," which primarily serves small and medium-sized producers. The main goal is to optimize production, quality, and sustainability by applying process engineering methodologies. The approach involves detailed measurement of task times in intervals to determine the overall "cycle time" of the plant. Analysis will be used to identify bottlenecks—tasks consuming the most time and limiting productive capacity. Subsequent process reordering, plant layout optimization, and resource management, supported by mathematical-statistical analysis, aim to increase overall capacity, reduce waste and pollutants, and ensure the optimal utilization of raw milk supply under food safety protocols.<br/><br/><b>Goal</b>: <br/>To optimize the production, quality, and sustainability of the dairy processing plant "El Tambo" by applying productive techniques and analyzing cycle times and bottlenecks.<br/><br/><b>Research lines</b>: <br/>Agroecology, environment and territory
