This project addresses the gap between university knowledge generation and the productive sector, focusing on improving the efficiency and sustainability of the dairy processing plant "El Tambo," which primarily serves small and medium-sized producers. The main goal is to optimize the production, quality, and sustainability of milk transformation processes, a crucial raw material in areas like Pichincha. The methodology relies on industrial engineering methods, specifically determining the "cycle time" by measuring task times in intervals for lengthy operations, following principles established by Mosquera E. Furthermore, bottleneck identification, as per Izurieta P., will be applied to locate time-consuming tasks and reduce their impact on production capacity. The resulting mathematical-statistical analysis will enable efficient process reorganization, improved plant layout, and resource optimization, leading to a reduction in waste and pollutants while ensuring the full utilization of raw materials under food safety protocols.<br/><br/><b>Goal</b>: <br/>To optimize the production, quality, and sustainability of the dairy processing plant "El Tambo" by applying productive techniques, focusing on measuring task times and identifying and reducing bottlenecks.<br/><br/><b>Research lines</b>: <br/>Agroecology, environment and territory
