Influence of Technical Training on Good Milking Practices and its Consequences on the Microbiological Quality of Raw Bovine Milk, Working with Organized Rural Producers in Ecuador (Phase 2)

This project addresses the issue of microbiological contamination in raw milk, a common challenge in rural production due to poor hygiene and lack of technical training among producers. The main objective is to evaluate how technical training in good milking hygiene practices influences the microbiological quality of milk produced by 26 organized dairy farmers in Cayambe, who face penalties for high bacterial and somatic cell counts. The methodology involves bimonthly visits to identify risk factors, results socialization, and focused training sessions. Laboratory analyses will be conducted on milk samples collected at the collection center, utilizing infrared spectrophotometry for physicochemical parameters (fat, protein, lactose) and flow/image cytometry for total bacterial and somatic cell counts. Furthermore, bacterial load on surfaces and milkers' hands will be assessed using Petrifilm plates. It is anticipated that improved microbiological quality will strengthen producer associations, enhance market prices, and ensure the availability of higher quality milk for consumers and processors while preserving its nutritional value.<br/><br/><b>Goal</b>: <br/>To evaluate the influence of technical training in good hygiene practices during milking on the microbiological quality of raw bovine milk and the perceived economic benefits for organized rural producers in Cayambe.<br/><br/><b>Research lines</b>: <br/>Quality and safety in milk and derivatives
