This applied research project seeks to characterize the physicochemical, microbiological, and sanitary quality of bovine milk across various regions of Ecuador. Given the need to improve the competitiveness of the dairy sector and comply with quality-based payment regulations, the study analyzes how factors such as seasonality, management practices, and feeding influence milk composition, specifically its fatty acid profile. The methodological approach is multidisciplinary and mixed, combining advanced laboratory analyses, such as gas chromatography-mass spectrometry, with surveys of producers and consumers. Milk and forage samples will be evaluated in key production areas, integrating sensory analysis of dairy derivatives to understand local market preferences. Expected results include the design of improvement strategies for producers, the generation of scientific information for the dairy industry, and the promotion of responsible consumption. The project contributes directly to food sovereignty and the sustainability of the agricultural sector, aligning with the Sustainable Development Goals (SDGs) of Zero Hunger and Responsible Consumption and Production.<br/><br/><b>Goal</b>: <br/>To analyze the chemical and microbiological quality of bovine milk, with an emphasis on the fatty acid profile, to identify factors of variability and relate them to consumption preferences within the context of sustainable livestock production.<br/><br/><b>Research lines</b>: <br/>Sustainability of dairy production systems
