This research project addresses the need to valorize non-traditional fruits from Ecuador, which possess high potential as functional foods due to their richness in bioactive compounds. Despite their nutritional value, these fruits are poorly studied and underutilized, often limited to local consumption without fully leveraging their by-products such as peels and seeds. The study proposes a comprehensive methodology that includes physical-chemical characterization and the quantification of bioactive compounds (vitamin C, carotenoids, phenols, among others) in the pulp, seeds, and peels. Advanced techniques such as liquid chromatography and spectrophotometry will be used to evaluate antioxidant and antimicrobial activity in vitro. Additionally, new products derived from the edible fraction will be developed through optimized drying processes. The expected impact is twofold: on one hand, to generate scientific knowledge about the functional properties of little-known species, and on the other, to offer industrialization alternatives that improve the shelf life and commercialization of these products. This will contribute directly to the economic revitalization of farmers in vulnerable areas and foster innovation in the food and pharmaceutical industries.<br/><br/><b>Goal</b>: <br/>To determine the antioxidant and antimicrobial activity of the pulp, seeds, and peels of functional Ecuadorian fruits to evaluate their potential for industrial use.
