This project addresses the public health issue stemming from the potential presence of antibiotic residues in beef consumed in Quito, a highly consumed meat in Ecuador. The investigation is based on the need to ensure compliance with veterinary drug withdrawal periods, as mandated by AGROCALIDAD regulations, to prevent consumer risks. Samples of meat (muscle) and offal (liver, kidney) from cattle sourced from markets and supermarkets in specific northern and southern sectors of Quito were strategically selected, following the NTE INEN 0776:2012 standard for sampling. Quantitative analysis was performed at the AGROCALIDAD Laboratory using competitive Enzyme-Linked Immunosorbent Assays (ELISA) provided by BIOO Scientific Corp, focusing on detecting common antibiotic families such as Beta-lactams, Tetracyclines, Macrolides, Aminoglycosides, Sulfonamides, and Fluoroquinolones. The methodology included a factorial experimental design (4x3) for markets and supermarkets, and the use of standard curves to calculate relative absorbance and determine detection and quantification limits. Finally, the concentration results will undergo analysis of variance to identify the points of sale with the highest concentration of residues, providing crucial data for sanitary surveillance.<br/><br/><b>Goal</b>: <br/>The main objective of this project is to determine the presence and quantify antibiotic residues in beef meat and offal marketed in the city of Quito, utilizing the Enzyme-Linked Immunosorbent Assay (ELISA) method.
