Compositional and Microbiological Quality of Raw Bovine Milk in the Ecuadorian Sierra

This project focuses on comprehensively evaluating the quality of raw milk produced in two specific agroclimatic zones of the Ecuadorian Sierra, considering the influence of two annual seasons. The main objective is to establish a reference framework for the local livestock sector, given the lack of quality-based payment schemes relying on physicochemical, sanitary, and microbiological analyses in Ecuador. The methodology includes the rigorous validation of analytical methods for key parameters such as composition (fat, protein, lactose, total solids, urea), somatic cell count (SCC), and total bacterial count (TBC). Advanced equipment such as the Milkoscan FT 6000 (infrared spectrophotometry) and Bactoscan FT (flow cytometry) will be utilized. Furthermore, surveys will be conducted with producers regarding milking best practices. The obtained results will be statistically analyzed (INFOSTAT) to correlate quality with zone and season, and finally disseminated through reports, scientific articles, and presentations to producers and relevant institutions to strengthen the production of safe and high-quality milk.<br/><br/><b>Goal</b>: <br/>To determine the quality of raw milk across two agroclimatic zones in the Ecuadorian Sierra and during two distinct seasons, utilizing validated analytical methods to provide reference information for the livestock sector.<br/><br/><b>Research lines</b>: <br/>Quality and food safety management systems in milk and derivatives
